SODIUM DIACETATE
GENERAL INFORMATION Sodium diacetate is a molecular compound of acetic acid and sodium acetate. According to a patent, free acetic acid is built into the crystal lattice of neutral sodium acetate. The acid is firmly held as it is evident from the negligible odour of the product. In solution it is split off into its consistent acetic acid and sodium acetate.

CHARACTERISTICS Sodium diacetate is a dustfree, partially hydroscopic, yet free flowing crystalline material. It neither forms lumps nor releases acetic acid even during longer storage periods. In general it is used as an antimicrobial agent in baked goods and other foods. Sodium diacetate inhibits growth of many deleterious micro-organisms in dough and bread notable mesenteric bacillus. At the same time its mild acid properties develop the pastry aroma without however introducing too much acid or shallow a flavour character. LEGAL ASPECTS In Europe sodium diacetate is listed as a generally permitted food additive (E 262) and may be added to all foodstuffs, following the "quantum satis" principle, as long as no special regulation restricts the use. The US Food and Drug Administration (FDA) affirmed sodium diacetate as a direct food substance generally recognized as safe (GRAS) and permitted the use in food with no limitation.
